Add this slow-cooker, Mexican-inspired chicken dinner to your regular dinner rotation.
Ingredient
- 1 1/2 lb boneless skinless chicken breasts
- 2 tablespoons from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
- 1 jar (16 oz) green tomatillo salsa (salsa verde)
- 1 lime
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- Hot cooked rice
Instructions
- Step 1Spray 3- to 4-quart slow cooker with cooking spray. Place chicken in slow cooker. Sprinkle taco seasoning over chicken; pour salsa over chicken.
- Step 2Cover; cook on Low heat setting 6 to 8 hours. About 30 minutes before serving, squeeze lime over chicken. Stir in cilantro.
- Step 3Using 2 forks, shred chicken in slow cooker. Stir in sour cream. Serve chicken over rice. Garnish with additional cilantro, if desired.
Recipe Tips
- If you need dinner to be done faster, you can use the High heat setting on the slow cooker and cook the chicken for about 4 hours instead.
- Use the shredded chicken as a burrito or taco filler instead of serving over rice.
