This apple dessert is a sweet take on a Mexican favorite, drizzled in caramel.
Ingredient
- 4 apples, peeled, cored and cut in wedges
- 1/4 cup butter
- 1/4 cup packed brown sugar
- 4 tortillas from 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count)
- Cooking spray
- Vanilla ice cream
- 1/4 cup caramel sauce, warmed
Instructions
- Step 1Heat oven to 450°F. Spray 8- or 9-inch (2-quart) square baking dish with cooking spray.
- Step 2In 10-inch skillet, heat apples and butter over medium heat 5 to 7 minutes or until apples are tender. Add brown sugar, and cook until melted.
- Step 3Spoon one-fourth of the apples on each tortilla, and roll up. Place seam side down in baking dish. Spray tops of enchiladas with cooking spray.
- Step 4Bake 10 to 15 minutes or until golden brown.
- Step 5Serve with ice cream and drizzled with caramel sauce.
Recipe Tips
- Pears or peaches can also be used in this recipe.
- Any crisp apple will work in this recipe. I used Fuji apples.
